Ravioli is a traditional Italian pasta dish, consisting of a filling enveloped in thin pasta dough and shaped into a little square dumpling. The origin of this Italian dish dates back to the 14th century, and ever since, the world has fallen in love with ravioli for their quick and easy preparation and rich taste. Although this delicious dish is considered a main course, it can also be served as an appetiser or side dish. We use high-quality wild salmon to prepare the filling of our ravioli for a truly decadent meal. Aleksandar Ločmelis-Manevski, the chef of Latvia’s top Italian Restaurant Itallisimo, created the recipe for our ravioli with Alaskan wild salmon filling. In fact, Latvia has developed a unique synergy between the ravioli tradition of Italian cuisine and Russian pelmeni (пелмени), a distant relative of ravioli, which are often stuffed with fish.
